Ingredients
1 lb SEA LEGS® Real Simple Flake Style Surimi Seafood
4 oz rice vermicelli
16 8-inch round rice paper wrappers
1/2 English cucumber, finely julienned
1 red pepper, seeded and finely julienned
2 oz julienned finely carrots
32 mint leaves
Sriracha mayonnaise
Directions
Soak the noodles in boiling water for 20 minutes. Drain and pat dry.
Soak 1 wrapper in hot water for 30 seconds and remove set on prep surface
Top each wrapper with 2 mint leaves, 2 pieces of Real Simple Flake Style Surimi Seafood, ¼ oz. noodles, a few pieces each of cucumber, red pepper, and carrots.
Tightly fold the wrapper over the filling, tuck in the sides, and roll up. Cover with a damp towel and repeat with the remaining wrappers.
