Wild Alaska Pollock Burger with Fried Egg Tapenade

12 Wild Alaska Pollock Burger 4 oz
4 Cups Green or Firm Ripe Papaya (shredded)
2 Plum Tomatoes (diced)
2 Tbsp fish sauce
2 Tbsp Lime Juice
1-2 Thai Chilies (Minced)
2 Cloves Garlic, minced
1 Tbsp Dried Shrimp, minced (optional)
2 tsp Brown Sugar
Salt & Pepper
3 Cups Mayonnaise
12 Burger Buns (Toasted)
Bibb Lettuce
Thai Basil (Slivered)
Peanuts, chopped
Combine papaya, tomatoes, fish sauce, lime juice, chilies, garlic, dried shrimp and brown sugar. Season.
Spread mayonnaise on cut sides of buns and top lettuce, Pollock burgers, 1/4 cup salad and sprinkle with basil and peanuts.
