12 Redi Grilled™ Wild Alaska Salmon, Fully Cooked Portion, 4 oz
3 lb Sweet Potato Fries, cooked
Mint for Garnish
Feta Cheese, crumbled
Sauce
1 Cup Lime Juice
1/2 Cup Vegetable Oil
2/3 Cup huacatay paste
2/3 Cup Mint Leaves
8 Garlic Cloves
1 1/2 Cups Heavy Cream
Salt & Pepper
Cayenne Pepper
Directions
Blend sauce ingredients until smooth. Season with salt, pepper and cayenne.
Serve salmon with fries, sauce, sprinkled with mint leaves and feta.
