Mini Plantain and Fish Bites

Ingredients

  • 1 box of Trident Seafoods The Ultimate Fish Sticks

  • 2 ripe plantains, peeled and sliced into 1/2-inch thick rounds

  • 2 Tbsp vegetable oil (for frying plantains)

  • Salt and pepper to taste

  • 1/4 cup honey

  • 1 Tbsp lime juice

  • 1 Tbsp chopped fresh cilantro (optional, for garnish)

Directions

  1. Prepare the Plantains: Heat vegetable oil in a skillet over medium heat. Fry the plantain slices in batches until golden brown and crispy, about 2-3 minutes per side. Drain on paper towels and season with a pinch of salt.

  2. Prepare the Trident Seafoods The Ultimate Fish Sticks according to the package instructions, usually by baking or frying. Once cooked, cut each fish stick into bite-sized pieces.

  3. Make the Honey Lime Sauce: In a small bowl, mix together honey and lime juice. Adjust to taste if needed. On a serving platter, arrange the fried plantain slices. Top each plantain slice with a piece of the cooked fish stick.

  4. Drizzle the honey lime sauce over the fish and plantain bites. Garnish with chopped fresh cilantro if desired. Enjoy!
