Crispy Cheesy Fish Stick Breakfast Tacos

Ingredients

  • 1 box Trident Seafoods The Ultimate Fish Stick (about 10 fish sticks)

  • 8 small tortillas (flour or corn, depending on preference)

  • 1 cup shredded cheddar cheese

  • 1 cup scrambled eggs (about 4 large eggs)

  • 1/2 cup sour cream1/4 cup salsa (mild or spicy, depending on preference)

  • 1/4 cup chopped fresh cilantro (optional)

  • 1 avocado, sliced (optional)Lime wedges (for serving, optional)

  • 2 tablespoons olive oil

  • 1/2 cup shredded cheese for crusting (cheddar or a blend)

Directions

  1. Preheat your oven and cook the Trident Seafoods The Ultimate Fish Sticks according to the package instructions, usually at 425°F for 12-15 minutes, until crispy. Once cooked, remove from the oven and let them cool slightly.

  2. Meanwhile, in a non-stick skillet, heat a small amount of oil or butter over medium heat. Crack the eggs into a bowl, season with salt and pepper, and whisk until well combined. Pour the eggs into the skillet and cook, stirring occasionally, until scrambled and cooked through. Set aside.

  3. Heat a large non-stick skillet over medium heat. Place 1/4 cup of shredded cheese evenly over the skillet (the size of your tortilla. Place one tortilla over the cheese. Cook for about 1-2 minutes until the cheese starts to melt and the bottom of the tortilla is golden and crispy.

  4. Place 1-2 fish sticks in the center of the tortilla. Spoon scrambled eggs on top of the fish sticks. Sprinkle additional shredded cheese over the eggs and fish sticks.

  5. Remove the taco from the skillet. Top with a dollop of sour cream and a spoonful of salsa. Garnish with fresh cilantro, avocado slices, and lime wedges if desired.
