Cajun Cod and Cheddar Grits

Ingredients

Cajun Cod: 

  • 1 Tbsp olive oil 

  • 4 pieces Trident Seafoods Pubhouse Battered Alaska Cod 

  • 1 Tbsp Cajun seasoning 

Cheddar Grits: 

  • 1 cup quick-cooking grits (ensure gluten-free) 

  • 3 cups chicken broth or water 

  • 1 cup sharp cheddar cheese, shredded 

  • 2 Tbsp butter 

  • Salt and pepper to taste 

Toppings

  • 2 green onions, chopped 

  • Fresh parsley, chopped 

  • Hot sauce

Directions

  1. Preheat your oven according to the package instructions for the Trident Seafoods Pubhouse Battered Alaska Cod. Place the cod pieces on a baking sheet and drizzle with a little olive oil. Sprinkle Cajun seasoning evenly over both sides of the cod. Bake the cod in the oven according to the package instructions, typically around 15-20 minutes, until golden brown and crispy. 

  2. Make the Cheddar Grits: In a medium saucepan, bring the chicken broth or water to a boil. Slowly whisk in the grits, reducing the heat to low. Cook the grits for about 5-7 minutes, stirring frequently, until they thicken. Stir in the butter, shredded cheddar cheese, salt, and pepper. Continue stirring until the cheese is fully melted and the grits are creamy. 

  3. Spoon the cheesy grits onto two plates, creating a bed for the cod. Place two pieces of Cajun cod on top of each plate of grits. Garnish with chopped green onions and parsley. Add a drizzle of hot sauce for extra heat.
