Firecracker Salmon Lettuce Wraps with Pineapple Cilantro Salsa

1  Cup Thai Sweet Chili Sauce
1/4  Cup Soy Sauce
1  Tablespoon Garlic, minced
1/4  Cup Ginger, chopped
1  teaspoon Red Chili Flakes
1/4  Cup Lime Juice
5  oz Carrot, shredded
2  oz Green Onion, thinly sliced
5  oz Red Bell Pepper (Julienned)
36   Green Leaf Lettuce (Whole Leaves)

Whisk together sauce ingredients. Mix carrots, green onions and bell peppers. For each serving toss the 3 salmon pieces in 2 tbsp. sauce. Place each piece of salmon on a lettuce leaf and top with 1 oz. vegetable mix.
