Alaska Cod Cakes on Carrot Waffles

3/4  LBs Carrots (Cut into Wedges)
3  Cups Waffle Mix
1/4  Cup Butter
1  LB Bacon
3  Cups Maple Syrup

1. Cover the carrots in cold salted water and bring to boil. Simmer until very tender. Drain, reserving the cooking liquid and puree carrots. Make waffle mix according to package directions and stir in carrot puree and enough of the carrot cooking water to make a batter with the proper thickness. Cook waffles to order.

2. Meanwhile, blanch and shock spinach, squeeze out as much liquid as possible. When ready to serve, melt butter in large skillet, add spinach and cook until heated through. Season with salt and pepper

3. To make bacon maple syrup, cook bacon, coarsely chop. Add 1/3 cup bacon to maple syrup and bring to simmer. Reserve remaining bacon.

4. To serve, top 1 waffle with 1/2 cup spinach, 1 cod cake and 1 tablespoon chopped bacon. Serve with 1/4 cup Bacon Maple Syrup.
